Zucchini-Ribbons Salad

2 medium-sized zucchini 3 juicy, ripe medium-sized tomatoes Zucchini-Ribbons Salad 2 Tbl walnut oil Salt & pepper to taste A couple of handfuls of toasted pumpkin seeds Simply start off by using the ribbon accessory on your veggie spiralizer to cut the zucchini into long curly ribbons. Douse them with the walnut oil, salt and pepper, and mix well. Arrange the zucchini in your serving dish. Dice the tomatoes and place them in a dollop in the middle of the zucchini ribbons. Then sprinkle toasted pumpkin seeds over it all! Super easy and surprisingly delicious!  *Notes: Try not to substitute the walnut oil for another variety and don’t forget the pumpkin seeds! The combination of flavors makes it special!

Süßkartoffeln & Kichererbsen mit Kokosmilch und Basmati Reis

Dieses Rezept ist zur Zeit meine absolut Lieblingsessen! Reich in Kohlenhydrat und Eiweiss, ein Salat dazu macht für ein Ernährungsgipfel. Genug für Drei.                                Vorbereitung und Kochzeit 30min...schnell! 2 EL Kokosöl 1 TL Ingwer klein geschnitten 2 gelbe Zwiebeln klein geschnitten 2 Zehen Knobloch gepresst ½ TL Salz 2 große Sußkartoffeln in ca. 1 cm 3 würfeln geschnitten 500 mL Gemüsebrühe 100 mL Kokosmilch ½ TL Thai curry gewürz (oder normale Curry wenn nicht vorhanden) 250 g Kichererbsen 250 g Basmatireis (Braunreis oder Wildreis für ein gesunder alternativ, aber der Basmati passt hier wunderbar!) Der Reis vorbereiten nach Packunganleitung. Kokosöl in eine tiefe Pfanne auf mittlere-höhe Hitze aufwärmen und den Ingwer, Zweibeln und Knobloch dazu geben, dann 3-5 min braten lassen. Die Sußartoffeln dazu geben und weitere 5 min braten...

Mango Chutney

Mango Chutney 3 Äpfel 2 Mangoes 1 rote Paprika 200 ml Zucker 150 ml klein geschnittene Zwiebel 125 ml Rosinen 125 ml Tafel Essig (nicht das Konzentrat!) 1 EL klein geschnittne Ingwer 1 EL Zitronensaft 2 TL Currypulver ½ TL jeweils Muskat, Zimt und Salz Äpfel, Mangoes, Paprika, Zucker, Zwiebel, Rosinen, Essig und Ingwer in einen Topf zum kochen bringen. Temperatur reduzieren und 20 Min kochen lassen, gelegentlich rühren, bis Obst weich ist. Zitronensaft, Currypulver, Muskat, Zimt und Salz dazu geben und 5 Min weiter kochen. A year can seem like an eternity if you are a kid waiting for Christmas or your 8 th birthday to arrive. But a year to build up to a 250km desert race is a close call, at least for me. It’s not that I am starting from zero, my physical condition is actually rather good (despite my physical therapist consistently referring to me as a “ whole-body construction site ”), and I have a couple of ultras, a few marathons and a number of other non-insignificant endeavors under my belt. But ultra running has a very dominant mental aspect to it that should not be underestimated. Many who are physically capable of running one may never finish due to mental impasses, whereas anyone with their mind set to something can conquer all odds, which we’ve all seen proven time and time again. That said, if I feel my training has been adequate, then I mentally know that I am physically capable of achieving my goals.
